If you make a batch of chicken rice soup, this is a great way to turn leftovers into a new meal! I used my leftovers from my Quick Chicken Soup - it turned out great!
I just put about a cup of soup with minimal broth into a skillet and added an egg on the other side.
I let them cook separately for a minute and then mixed it together.
Stir occasionally until the egg is cooked, then enjoy!
